These secretly healthy Peanut Butter & Chocolate Smoothie Popsicles are mixed with a serving of veggies and other superfoods, so that even your kids won’t know they’re eating their greens!

I stumbled upon this recipe as I was making one of my daily smoothies. I had just gotten this awesome popsicle mold, and thought, I love the flavor of my smoothies so much, why not change it up a bit and make it into a popsicle and add some extras to it??

I love a healthy snack disguised as a dessert, and luckily, these peanut butter & chocolate smoothie popsicles are so easy to make! And an extra plus? No one will ever be able to tell that there’s a serving of spinach AND cauliflower in these babies! The chocolate fudge protein powder, along with peanut butter and pure maple syrup do a great job of hiding any trace of those veggies.

To add even more macros to your smoothie popsicle, blend in:

  • collagen peptides
  • chia seeds, sesame seeds, flax seeds…you get the point!
  • other nut butters
  • pitted medjool dates (in place of syrup for sweetness)
  • coconut milk (in place of almond milk)

Enjoy your popsicle as is, or add some fun toppings like I did with dark chocolate and hazelnuts!

These secretly healthy Peanut Butter & Chocolate Smoothie Popsicles are mixed with a serving of veggies and other superfoods, so that even your kids won't know they're eating their greens! 

Ingredients

  • POPSICLES
  • 1 cup unsweetened almond milk
  • 1/2 frozen banana
  • 1/2 cup frozen riced cauliflower
  • 2 scoops Orgain Creamy Chocolate Fudge Organic Protein™ & Superfoods Plant Based Protein Powder
  • 1 handful fresh spinach
  • 1 1/2 T natural peanut butter
  • 1 t pure maple syrup
  • DARK CHOCOLATE HAZELNUT TOPPING (optional)
  • 2 T chopped roasted hazelnuts
  • 1/2 cup dark chocolate chips
  • 1/2 t coconut oil

Instructions

Pour almond milk in high speed blender, followed by all of the other ingredients. (Another option is to leave the peanut butter out and swirl it evenly into each individual popsicle mold to achieve a stronger peanut butter taste.)

Begin blending on low speed, working your way up to the highest speed. You might need to use your blender's wand to push ingredients down at first.

Once completely blended, pour evenly into 8 popsicle molds.

Freeze for 30 minutes, and then place the popsicle mold top on and insert the popsicle sticks. Don't push the sticks all the way down, as they will settle and sink a bit on their own.

Freeze for about 4 hours.

Remove from freezer and run the popsicle mold under warm water on each side until the popsicles can be easily removed. Either eat and enjoy, or add some toppings!

For the dark chocolate topping, chop 2-3 T roasted hazelnuts and set aside (chop them much finer than you see pictured as it will be easier to eat!).

Next, melt the dark chocolate in microwave with coconut oil in 30 second intervals, stirring each time until melted and combined (about 1 - 1.5 minutes).

Using a spoon, drip the chocolate onto a corner of each popsicle and lay flat on parchment paper lined baking sheet. (*Don't dip popsicles into hot, melted chocolate! Your popsicle will melt into the chocolate bowl, and it will ruin the mixture.)

Sprinkle with chopped hazelnuts and return to freezer for another 30 minutes.

Remove and enjoy!

Store popsicles in plastic sandwich bags in the freezer.
