A delicious low-carb breakfast or brunch option. It's dairy free and gluten free! 

Ingredients

  • 7 eggs⠀
  • 1/4 c coconut milk cream (just the creamy part that sits in the top of the can. Refrigerate can overnight to achieve this.)⠀
  • 4 links chicken sausage (cooked)⠀
  • 4 slices turkey bacon (cooked)⠀
  • 5 oz bag fresh spinach⠀
  • 1/4 c chopped onion⠀
  • 1 clove garlic⠀
  • Pinch salt, pepper, garlic salt ⠀
  • 1 T extra virgin olive oil

Instructions

Preheat oven to 375 degrees F.

Spray quiche or pie dish with avocado oil. ⠀

Chop the cooked sausage and bacon. Set aside. ⠀

Whisk eggs and coconut cream in medium bowl until well blended. Add salt, pepper, and garlic powder. ⠀

Heat oil in pan. Add garlic and brown for a minute or two. ⠀

Add onion and sauté. Then add spinach and sauté together. ⠀

Combine the meat into sauté for just a few minutes, mixing together. ⠀

Pour sauté mix into quiche or pie dish. ⠀

Add egg mixture. ⠀

Bake at 375 for 25 minutes. ⠀

Let cool for 10 minutes before slicing. ⠀
