Dark Chocolate Covered Watermelon with Pecans
A sweet and salty summer treat. Watermelon covered in dark chocolate with chopped pecans & sea salt.
Ingredients
- 1 cup dark chocolate chips
- 1 T coconut oil
- 12 slices of seedless watermelon
- 1-2 cups chopped pecans
- coarse seal salt
Instructions
Line baking sheet with parchment paper.
In the microwave, melt about 1 cup of dark chocolate chips and 1 T coconut oil, stirring every 30 seconds until it’s smooth and a good dipping texture.⠀
Take a spoonful of melted chocolate and coat each watermelon slice, running the back of your spoon along each edge for a clean finish. (I didn’t coat the back of each, but you can to seal in the water.) Place on parchment paper lined baking sheet. ⠀
Sprinkle chopped pecans and sea salt.
Refrigerate at least an hour to set. (If you let these sit out in the summer heat, they will melt, so take them out right as they are ready to be served!)
*Store in refrigerator 2-3 days.⠀
