Roasted Asparagus with Bacon & Parmesan

This easy Roasted Asparagus with Bacon & Parmesan recipe is a perfect side dish for any dinner! Smoky, salty bacon and nutty parmesan cheese atop tender green spears come together to create a delicious combination everyone will enjoy! 


When I prepare veggies of any kind, you can bet that, 9 times out of 10, they will be roasted in the oven. Why? Well first of all, it’s so easy! There’s nothing like tossing the vegetables around in some olive oil along with your preferred seasonings and popping them into the oven to toast up. Second, roasting them brings out the natural sweetness and full flavors that you wouldn’t normally get from steaming them. And third, plain and simple, I just love a little added crisp to my veggies!

I add garlic and parmesan to almost every savory vegetable dish I make.  That combo alone can be enough, but when you bring in the flavors of a salty and smoky bacon, it brings the dish to a whole new level!

How to Make Roasted Asparagus with Bacon & Parmesan

Start by preheating the oven to 425 degrees F, and lining a baking sheet with parchment paper. Next, wash and dry asparagus completely. Chop the woody ends from each asparagus spear, and arrange them onto baking sheet. Give a quick spray to one side of the spears, and follow with adding all other ingredients over top (except for 1/4 cup of divided parmesan). Toss with a pair of tongs until everything is combined and coated. Spread the asparagus into one even layer ensuring they aren’t overlapping so they have room to toast up. Give another quick spray over newly tossed asparagus, and place in the oven. Bake for 15-18 minutes, tossing halfway, until spears are lightly browned, and the Parmesan is melted. Remove from oven and sprinkle the remaining 1/4 cup parmesan cheese on the hot asparagus. Serve warm and enjoy!


When planning out how much asparagus to make, it’s helpful to use this rule of thumb:

1  pound of asparagus = 12-15 spears

1 pound serves 2-4 people

  • 1 lb asparagus
  • 4 slices cooked and chopped bacon or turkey bacon
  • 3/4 cup freshly grated parmesan cheese, divided
  • pinch salt & pepper
  • 3 garlic cloves, minced
  • olive oil spray

Instructions
