White pizza was a staple in my house growing up.  My mom would make my grandma’s homemade pizza dough and make a few batches of “red” pizza and a few batches of “white” pizza. The white pizza was always topped with light cheese, olive oil, and caramelized onions.

There are so many variations for making white pizza, but  for the sake of keeping it simple and trying to add some nutrients to my meal, I decided to add sautéed spinach and some extra greens as a topping.  

This almond flour crust really is an excellent alternative to regular crust. It’s so low in carbohydrates, and it’s also gluten free.  It’s similar to a flatbread, in a sense, as it has a flatter and crispier crust. I was a bit skeptical as I was testing this recipe out, but I was very pleasantly surprised with the final result. You’ve got to give it a try, too, and let me know what you think!

Topped with caramelized onions, spinach, and fresh mozzarella, this white pizza with almond flour crust is the perfect low carb and gluten free option for your next pizza night!

Ingredients

  • Pizza Dough
  • 1 t italian seasoning
  • 1/2 t onion powder
  • 1/4 t sea salt
  • 2 cloves garlic
  • 1/3 c parmesan cheese
  • 3 T coconut oil, melted
  • 2 large eggs
  • 1 1/2 cup almond flour
  • Pizza Topping
  • 1 clove garlic
  • 1 t extra virgin olive oil
  • 1 medium onion, sliced or diced
  • 2 T butter
  • 5 oz fresh spinach
  • 2 cups shredded or fresh mozzarella

Instructions

Preheat oven to 425 F

Whisk together eggs with parmesan cheese, coconut oil, garlic, salt, onion powder, and herbs.

Add almond flour and mix with a spatula until dough is well blended.

On a large pizza pan covered with parchment paper, form your pizza. It's best to place another piece of parchment paper on top and smooth or roll out dough so that the dough doesn't stick to your hands.

Bake at 425 F for 10 minutes or until crust is slightly browned on the edges.

While crust is baking, prepare the toppings.

Heat oil over medium-high heat, add garlic and sauté until slightly browned.

Add butter and onions. Sauté until caramelized, stirring occasionally.

Add the fresh spinach and sauté just a minute.

Remove pizza from oven. Cool slightly.

Place a small layer of mozzarella on the pizza, followed by the onion and spinach toppings. Finish with the remaining mozzarella and bake another 10 minutes, or until cheese is melted.

Notes

This pizza crust does not expand while baking.
